Camper Salad
This summer potato salad features carbohydrates, proteins and vitamins. To prepare it, you need the following ingredients:
● Half a kilo of potatoes
● 1 green pepper
● 1 red pepper
● 2 or 3 tomatoes
● 1 chive
● 2 hard-boiled eggs
● 1 can of tuna
● Extra virgin olive oil
● Salt
First, you will have to cook the potatoes, place them in a pot with hot water and add salt. Alternatively, you can use the microwave. Then, cut the potatoes into slices and put them in a container. Place the tomatoes, peppers, and chopped chives on top of the potatoes. Add the hard-boiled eggs and the tuna. Season it with a splash of extra virgin olive oil, salt and salt, and voila!

Pasta Salad with Olives and Arugula (Rocket)
For this summer pasta salad, you will need the following ingredients:
● 320 grams of pasta
● 200 grams of green and black olives
● 50 grams of arugula
● 50 grams of Parmesan cheese ribbons
● Extra virgin olive oil
● Salt
Start by cooking the pasta according to the packet instructions. You can opt for wholegrain or regular pasta. Once cooked, let it cool. Place the pasta in a bowl and add the olives and arugula. Season the pasta mix with salt, extra virgin olive oil and parmesan cheese. And there you have it! Enjoy!
Chickpea Salad with Lemon Vinaigrette
This summer chickpea salad comes packed with citrusy goodness.
You will need the following ingredients:
● 400 grams of cooked chickpeas
● Half purple onion finely chopped
● 2 or 3 celery sticks, chopped
● 1 bunch of radishes, chopped
● 2 tablespoons chopped dill
Drain the chickpeas and mix with the rest of the ingredients in a salad bowl. It is that easy!
Then, to make the vinaigrette, you need:
● Juice of 1 lemon
● 1 clove of garlic
● 1 teaspoon of honey
● Salt
● Pepper
● 2 tablespoons extra virgin olive oil
Mince the garlic and combine it with the rest of the ingredients in a small container with a lid. Close tightly and mix away. Add the dressing into the salad bowl. Boom! You have made a chickpea summer salad with lemon vinaigrette.
