Homemade Ice Creams for Everyone

With or without an ice cream maker? 

Who said you have to have an ice cream maker to make creamy ice creams? There are several ways in which you can achieve professional like ice creams at home. The secret is in the fruit. By freezing the chopped fruit for at least five hours, you can expedite the making process, helping you achieve gorgeous creamy-textured ice creams. 

Once frozen, remove the fruit from the freezer and let it rest for a few minutes. In a high capacity blender mix it all the fruit together. 

Pro tip: use frozen bananas as the base of your ice cream for a thick and creamy texture.

Dairy-free Peach Ice Cream

Only two ingredients: peaches and bananas. 

The quality of your ice cream will depend on how ripe your peaches are. Remember you are using the banana as the base; you can add layers of flavour by adding different fruits in the mix. 

Ingredients (x 4 people):

3 ripe peaches
2 ripe bananas

Preparation: Wash the peaches and peel the bananas. Cut the fruit into chunks and put them in a freezer bag into the freezer overnight. Remove the fruit from the freezer 5 minutes before making the ice cream to defrost slightly, pour it into the food processor and blend for a few minutes until smooth and creamy. Serve and enjoy! 

 

Sugar-free Melon Sorbet

Ingredients (x 4 people):

500g of melon
2 ripe bananas

Preparation: Cut the melon's rind off and peel the bananas. Then chop everything into small chunks and throw in the freezer for at least 8 hours. Remove the fruit from the freezer, pour it into the food processor and blend for a few minutes until you get a soft mixture, similar to a frothy but still thick ice cream. Serve with mint leaves or fresh fruit, almonds or coconut flakes to taste.

 

Coconut Milk, Mango and Banana ice cream

Ingredients (x 4 people):

2 ripe bananas
2 ripe mangoes
500ml coconut milk

Preparation: Clean and cut the fruit into chunks, then put it in a freezer bag and freeze overnight. Pour the frozen fruit into the blender and blend with the coconut milk until well-mixed. Serve and enjoy! 

You can also add almonds or coconut flakes as a topping once served. 

 

Banana Ice Cream with Cinnamon and Ginger

Ingredients (x 4 people):

2 ripe bananas
1 apple
1 teaspoon ground cinnamon
1/2 teaspoon ginger powder

Preparation: Peel the apple and cut it into chunks, then do the same with bananas. Put the fruit in a freezer bag and freeze it overnight. Remove the fruit from the freezer and let it soften for a few minutes at room temperature, then put everything in the blender along with the spices and blend until smooth. Serve and enjoy!

 

Vegan Soy Yoghurt Fruit Lollies 

Ingredients (doses x 12 ice lollies):

920ml soy yoghurt (or vegetable yoghurt of your choice)
60g cherries
60 grams of pineapple (1 slice)
40 grams of blueberries
1 kiwi

Preparation: Pour 140 ml of yoghurt into the blender with the blueberries and blend well. Then pour the mixture into two ice lolly moulds. 

Do the same for the rest of the fruit: blend 140 ml of yoghurt with a different fruit of your choice each time and pour into two moulds. Finally, put the ice lolly moulds in the freezer for a few hours until they have completely frozen.

 

Melon Lollies 

Ingredients (x 4 ice lollies):

1/2 clean melon
2 clean yellow peaches
1 lemon
250ml natural yoghurt

Preparation: Wash and cut the fruit into small chunks. Blend together with the juice of 1 lemon. Mix the mixture with the yoghurt and pour into the popsicle moulds. Leave the lollies in the freezer for at least 5 hours until completely frozen.

 

Sugar-free Watermelon Granita

Ingredients (x 2 people):

300g watermelon
60g mint leaves
1/2 lime

Preparation: Wash and clean the watermelon, removing the seeds. Cut into cubes, store them in a freezer bag and freeze for about an hour. Then blend the frozen watermelon, adding the mint leaves and juice of 1/2 lime.
