Homemade healthy vegetable crisps

Ingredients: (4 servings)

  • 1 medium sweet potatoe
  • 1 beetroot
  • 1 parsnip
  • 1 tbsp of rapeseed oil
  • Salt (to your taste)

1 – Preheat oven to 140 degrees C (fan) or 160 Degrees C or Gas Mark 3

2 – Peel vegetables (if the skin is in good condition, you are welcome to keep them on). Slice them as thinly as possible using a vegetable peeler

3 – Ensure the vegetables are very dry. Place into a bowl and spread over the oil using your hands. Please make sure all the vegetables are well coated.

4- Arrange all the vegetables into a single layer on as many baking trays as necessary. Place the vegetables in the oven and cake until they're crisp and browned… This can take up to 25 – 30 minutes.

5- Once cooked, take out of the oven and when they've cooled toss them with some sea salt. Be sure to store in an airtight container
